The grapes for this Bobal were hand-picked from vines planted 35 years ago in Manchuela, Spain. Immediately after harvest, grapes were moved to stainless-steel tanks to ferment on organic, non-GMO selected yeast for 14 days. It was then bottled unaged, unfined and lightly filtered.
DID YOU KNOW? Bobal is the 2nd most widely planted grape variety in Spain! It was typically used as a blending grape, but higher-quality growing has made it a very popular wine on its own. The name Bobal is derived from the Latin word bovale, which means bull, since the Bobal grape clusters look like a Bull's head.
